Confit d'oie is a French ingredient so foreign to the English way of cooking that I don't even know how to translate it—neither do any of the references I can find on the web. It's goose cooked and salted and preserved in its own fat. It's used in making cassoulet and many other dishes. I'm planning to make some Real Soon Now; when I do this page will be updated.
