This is a dish that I first made on 20 October 2024. On 1 December 2024 I made some slight modifications.

Ingredients

quantity       ingredient       step
65 g       minced pork       1
      oil for frying       1
20 g       shallots       2
25 g       garlic paste       2
3 g (1)       Thai chili       2
10 g       hoisin sauce       3
15 g       bean sauce       3
100 ml       chicken broth       4
6 g       cornflour       4
120 g       firm dofu, cut into cubes       5
5 ml       sesame oil       6
1       spring onion       7

Preparation

  1. Fry pork until slightly cooked.
  2. Add shallots, garlic and chili and continue to fry.
  3. Add hoisin sauce and bean sauce, warm.
  4. Mix cornflour in the chicken broth, add to the pan.
  5. Add dofu, bring to the boil and cook for another minute or two, enough to warm the dofu.
  6. Add sesame oil and mix well.
  7. Add spring onion.
  8. Serve with rice.

Notes

So far the recipe is pretty much the same as the original. No sugar, of course, and also no white pepper. I used garlic paste instead of raw garlic, and I added a Thai chili.
