Goulash (to use the English spelling) is a dish better known in Germany (Gulasch) or Hungary (Gulyás). It's a surprisingly confusing dish, and Yvonne and I continually discuss details. As a result, we have no fewer than four recipes:

• Super-Gulaschsuppe, from Yvonne's livret de cuisine
• Hungarian “Cauldron” gulasch.
• A recipe that I wrote in December 2021, but which got lost because it was spelt differently. It has since been overtaken by the next version, so it's effectively retired.
• A recipe that I wrote in February 2024, effectively a modification of the Hungarian recipe.

Only four? Well, no. There's also Wildgulasch (venison goulash), which I made only once at Christmas 2006.
