Boil the unpeeled potatoes for about 30 minutes until soft. Allow to cool, peel and
mash.
Add the other ingredients and mix well. Form into about 10 balls, adding croutons if
desired. Place the balls carefully in hot water that isn't quire boiling. Poach for up
to 20 minutes. The dumplings will rise to the surface when they're done:

for the size of eggs that I use.

Preparation
Peel and boil the potatoes until quite soft.
Mash the potatoes and add the other ingredients, mixing well.
Form balls of about 60 g and place carefully into barely boiling water. Boil for 10 to
15 minutes, about 5 minutes after the dumplings rise to the surface.
Discussion
This recipe looks remarkably like mashed potato. I've been meaning to try dried mash potato
mix and compare it.
